What would cause soy to be crumbly? I noticed that Swan Creeks melts are like that. I was under the impression that soy was oily.

Depends on if it's a container soy or pillar soy or a blend of other waxes as well.

Crumbly soy IME is too-slow-cooled causing large grains to form. Can also be from soy being in pretty warm conditions where the wax fractions partially melt and resolidify in different grain sizes. I have some burts bees soy melts that are crumbly likethat.
