real food with tarts

Is it safe / ok to use real food on tarts? I saw someone make cinnamon bun tart with real cinnamon on top. Also a cup cake tart with real candy sprinkles on top. Is this ok to do..

Cinnamon is okay, and really anything would technically be okay, since there is no risk of flame, but candy would be messy when it melts. But I see no problem with cinnamon and other spices.
