ruba Posted May 29, 2007 Share Posted May 29, 2007 I posted this on a different thread, but wanted to put it here too.OK... I want to try an emulsified butter recipe and have never made lotion. My question is when you bring the water to the boil and hold it at 170, do you put a lid on it so that it doesn't evaporate?? I have searched and searched for the answer, but the only thing I saw was if water evaporated, to add some more water ... if I did that would that water also need to boiled to make sure all the "buggies" are out??Sorry if this seems like a stupid question and TIA. sudsnwicks Posted May 29, 2007 Share Posted May 29, 2007 I do put a lid on the pot, but I boil more water than I need. I just boil a big pot and then use what I need for the recipe. It would be easier than finding out I'm short and have to boil some more. Even without evaporation, there might be spills when you're pouring it out. Peachdream Posted May 29, 2007 Share Posted May 29, 2007 Me too...I heat more water than required (usually 10-20% more, which is more than enough as probably only 5% or less evaporates) and after its heated weigh it properly and toss the extra.
