bubble bars turning brown! Help!!

I've come to the conclusion that my strawberry Shortcake bubble bars are turning brown due to the vanilla..HOWEVER. .the first batch,when I used gel food coloring, did NOT. When I sprung for the BB LaBomb colorants, they're totally brown! 2 batches ruined! Does anyone know how I can remedy this situation? Thanks so much!! :(
