olive oils, what's the diff

I'm a virgin soaper, and had a couple questions:

Does it matter what kind of Olive oil I get? EVOO, Pomace, el-cheapo?

Same goes for veg. shortening. Is the new Crisco ok for this?

I intend to cut my teeth on a couple well known recipes here on the board, so I can compare with known results.
