Planning inventory

Calling all soap/B&B veterans! How much inventory do you usually plan to bring to a smallish show? For ex, do you figure so many items per expected head count in attendance? I realize one wants never to run out of stock, but I do need to plan the things that are better when as fresh as possible. Any tips will be major appreciated - the date of our boutique got moved up by almost a month, and I'm feeling a little panicky. :)
