what can i use to replace castor oil in my soap

Castor is something like 90% ricinoleic acid. No other common soaping oils have this fatty acid. Basically, castor is in a class by itself. Its contributions are conditioning and lather.

Yes, you could use olive instead. It mainly contributes to conditioning, so your lather may decrease a bit.
