Cooling. Slow or Fast?

Is it better to cool fast or slow? I always thought slow was better but when I make my 2oz tins and 16 oz jars at the same time, the 2oz naturally cools faster(bc its small) and it looks perfect where the 16oz jar gets air bubbles and sinkholes. Does anyone know why this is happening?
